Abstract
Procedimiento para la conservación y envasado de productos cárnicos que consta de las siguientes etapas y desarrolladas en el siguiente orden: a) Preparación del producto a envasar, constando de descuartización de la misma, desosificación y extracción de partes grasas o no útiles adheridas a las carnes ya descuartizadas, salado y sazonado. b) Llenado de botes con el producto cárnico, añadiendo aceite hasta el llenado total del envase. c) Tapado del envase con vacío o sin vacío, por medio de cierres estancos y herméticos conocidos en el estado de la técnica. d) Proceso de esterilizado o pasterizado, según necesidades de conservación.Procedure for the preservation and packaging of meat products consisting of the following stages and developed in the following order: a) Preparation of the product to be packaged, consisting of dismemberment of the same, deosification and extraction of fatty or non-useful parts attached to meats already quartered, salted and seasoned. b) Filling boats with the meat product, adding oil until the container is completely filled. c) Cover the container with vacuum or without vacuum, by means of watertight and hermetic seals known in the state of the art. d) Sterilized or pasteurized process, according to conservation needs.
