Abstract
Proceso para la preparación de ácido láctico y/o lactato donde se usa un jugo de remolacha crudo concentrado, es decir jugo de remolacha que no ha sido sometido a la adición de cal a pH de aproximadamente 11.2 ni a la adición de cal sobrante seguida de la adición de dióxido de carbono en dos estadios con eliminación del residuo/cal de carbonatación, con una concentración de al menos 60 g de sacarosa por 100 g de líquido (al menos un Brix de 60) como sustrato para la fermentación en ácido láctico y/o lactato mediante un microorganismo productor de ácido láctico.
