Abstract

Una bacteria acidoláctica de Streptococcus thermophilus de acidificación rápida que genera una viscosidad en la leche fermentada superior a 62 pascales-segundos (Pa.s) después de 14 días de almacenamiento a 6 ºC, en la que dicha bacteria comprende la secuencia expuesta en SEQ ID N.º 19 o un homólogo de la misma con al menos 90 % de identidad con la misma, o un fragmento de SEQ ID N.º 19 que comprende al menos 90 % de la secuencia SEQ ID N.º 19 y en la que dicha bacteria comprende la secuencia expuesta en SEQ ID N.º 20 o un homólogo de la misma con al menos 99 % de identidad con la misma.
