Abstract

Procedimiento para la obtención de un cacao instantáneo, es decir un cacao destinado a la preparación rápida de una bebida por simple dispersión en un líquido, caracterizándose por el hecho de que se somete el cacao en polvo a la acción del vapor de agua a presión, de modo que se obtenga un polvo de cacao cocido que tenga una proporción de agua comprendida entre 8 y 20%, granulándose después este polvo humedecido para obtener un producto en forma de gránulos.
