Horno para panadería y bollería, caracterizado porque comprende un recinto o carcasa subdividido, mediante un panel vertical intermedio transversal, en dos cámaras, una de calentamiento y otra de cocción, intercomunicadas entre equipo calefactor, mientras que la cámara de cocción lleve montado un tambor giratorio de eje vertical, en el que van situadas las bandejas o tabiques para el producto a cocer; siendo el panel vertical intermedio hueco, de doble pared, para definir una cámara de suministro de vapor; incluyendo el equipo calefactor un intercambiador a través del cual se hace circular aire mediante un ventilador, que lo aspira de la cámara de calentamiento y lo impulsa a la cámara de cocción, de la cual pasa de nuevo a la cámara de calentamiento, a través de la intercomunicación inferior de ambas cámaras, determinando un circuíto cerrado.
