Abstract
Método y su correspondiente planta para la preparación de un producto aperitivo alimenticio a base de patata, cuyo método se caracteriza porque comprende el mezclado de sólidos de patata cocinados con agua y fécula sin gelatinizar para formar una masa, la formación de una pieza a partir de dicha masa, controlándose de tal manera las operaciones de mezclado y formación que la pieza de masa contenga suficiente fécula gelatinizada y libre disponible y suficiente fécula sin gelatinizar para determinar la expansión de la pieza al cocinarse y la formación de un producto dotado de una estructura interna celular encajada en una capa exterior densa de porosidad sustancialmente reducida, la inmersión de dicha pieza en aceite comestible caliente, el cocinamiento de la pieza a una temperatura suficientemente elevada y durante un periodo de tiempo suficientemente prolongado para causar la expansión de la pieza y la formación de un producto dotado de dicha estructura celular interna y de la capa exteriory la ulterior retirada del producto de aceite.
