Abstract
Un método para formar continuamente filamentos proteínicos alargados a partir de una fuente de carne cocida que comprende: (a) formar una suspensión acuosa de una fuente de carne cocida que tiene un contenido de sólidos de al menos aproximadamente 10% en peso; (b) formar una suspensión bombeable tratando la suspensión para proporcionar una relación de viscosidad, medida a niveles de sólidos del 15% en peso, a una suspensión de carne no cocida de composición sustancialmente idéntica, de al menos aproximadamente 1:2; (c) formar filamentos proteínicos alargados bombeando continuamente la suspensión proteínica bajo presión a través de una zona de intercambio de calor y calentar la suspensión a una temperatura de al menos aproximadamente 138ºC, pero menor que la que degradaría la proteína mientras que la proteína se somete a dicha temperatura durante un período de tiempo suficiente, de modo que los filamentos alargados se separen de los constituyentes restantes de la suspensión retirando continuamente la suspensión calentada de dicha zona a través de un orificio y descargando los filamentos alargados formados y los constituyentes restantes de la suspensión en una zona colectora; (d) separar en dicha zona colectora los filamentos proteínicos alargados de los constituyentes restantes de la suspensión y recuperar dichos filamentos.
