Abstract

The prod. is first perforated deeply with a number of holes made by the insertion of narrow cutting blades. Mixing is then carried out in the presence of brine without using any axially displacable agitator independent of the mixing vessel and without using any surface scarifiers during the mixing operation. The mixing vessel is pref. a rotary cylindrical vessel on a horizontal but inclinable axis. One end of the vessel has an aperture with a removable lid which is secured to and sealed to the rim of the aperture by atmos. pressure while a vacuum is maintained in the vessel throughout the mixing stage. Ther is no need for prior injection with brine. A greater quantity of brine can be diffused into the tissues than previously. The quantity of brine can be closely controlled. Vacuum can be 'broken' several times during processing to induce diffusion of brine into the tissues.
