Abstract

Nuevo procedimiento para la conservación de carne en salmuera, sin inyección previa de salmuera, en un receptáculo sometido a aspiración de vacio, en el cual se realiza el malaxado de los artículos de charcutería, caracterizado por proceder preferentemente a una operación previa de realización de múltiples orificios en las piezas de carne, con ayuda de hojas cortantes estrechas, realizando perforaciones profundas y no superficiales , procediendo después a una operación de malaxado de la carne en presencia de salmuera, por rotación del recipiente sobre si mismo, sin intervención de ningún órgano mezclador axial independiente de la cuba y sin intervención de órganos escarificadores superficiales durante el malaxado.
