Abstract

Procedimiento de concentración de alimentos líquidos, tales como jugos y extractos de origen vegetal, en el cual la evaporación en un evaporador de múltiple efecto calentado por vapor se combina con la recuperación de los componentes sabrosos volátiles mediante separación, seguida de destilación, por medio de vapor directo, caracterizado porque el vapor para la recuperación de los componentes sabrosos volátiles se obtiene totalmente a partir del vapor generado en el evaporador.
