Abstract
1.- Procedimiento para preparar una composición aditiva para alimentos, que comprende las operaciones de: (a) calentar un emulgente elegido del grupo que consta de monoésteres de poliglicerina de ácidos grasos, ésteres de monoacilglicerina de ácidos dicarboxílicos, monoésteres de sacarosa de ácidos grasos, monoésteres de poliol de ácidos grasos, fosfolípidos, y mezclas de ellos, hasta una temperatura por encima de su punto de fusión, y añadir al emulgente fundido aditivos solubles en lípido para alimentos; (b) disolver previamente en agua aditivos para alimentos solubles en agua y mezclar de 10 a aproximadamente 90 partes de agua y aditivos solubles en agua para alimentos, previamente disueltos, con dicho emulgente, bajo alta cizalladura, para producir una emulsión; y © enfriar dicha emulsión simultánea o subsiguientemente, para formar un estado cristalino líquido que es térmicamente estable de 37 º C a 93ºC.
