Abstract

Procedimiento para la fabricación de premezclas grasas, que tienen un contenido en materias grasas superior a 50%, caracterizado porque la materia grasa considerada para la fabricación de la premezcla es emulsionada con la ayuda de proteína de patata solubilizada previamente por tratamiento alcalino, siendo la emulsión así obtenida atomizada en presencia de un soporte de atomización.
