Abstract
L'invention concerne un procédé pour éliminer le tartre du vin, du vin mousseux ou d'autres boissons contenant de l'acide tartrique. Ce procédé consiste à sursaturer la boisson avec du tartre dissous, à la refroidir ensuite à une température se situant au-dessous de la température d'entreposage et de transport la plus basse probable et, ensuite, à séparer le tartre décristallisé, de façon spontanée et naturelle. Utilisation dans l'industrie du vin.
