Abstract

L'invention concerne un procédé de préparation de pyrones. On obtient par mise en contact des alcools 2,5-dialkoxy-furfuryliques substitués en position 3 correspondants avec un acide des beta -dihydropyrones en opérant entre - 50 et + 25 degrés C ou des gamma-pyrones en effectuant une hydrolyse complète par chauffage. Application par exemple à la production du maltol ou 2-methyl-3-hydroxy-4H-pyranne-4-one, substance rehaussant le goût et l'arôme de divers produits alimentaires, à partir de 2-(1-hydroxy-éthyl)-2,3,5-trialkoxy-furannes ou de 2-(1-hydroxy-éthyl)2,5-dialkoxy-3-halogéno-furannes.
