Abstract
L'invention concerne un procédé pour la production d'un succédané du beurre de cacao par transestérification entre des graisses et huiles de glycérides contenant un grand nombre de résidus d'acide oléique en position 2 et un ou plusieurs acides gras en utilisant une lipase spécifique de la réaction en positions 1, 3 des triglycérides. Selon l'invention, on transestérifie lesdites graisses et huiles avec un ester d'alcool aliphatique choisi parmi les esters d'acide stéarique et d'acide palmitique en présence de pas plus de 0,18 % en poids d'eau par rapport au poids total du mélange de réaction.
