Abstract
Η παρούσα εφεύρεση αφορά σε γλυκό άλειμμα ρυθμιζόμενης ενεργότητας νερού (Aw), κατάλληλου για χρήση σε προϊόντα τύπου σάντουιτς (sandwich) έτοιμων προς κατανάλωση με ζωή εκτός ψύξης τουλάχιστον 15-25 ημέρες. Το άλειμμα περιλαμβάνει, μεταξύ άλλων, γλυκαντικό μέσο, νερό σε γαλακτοποιημένη μορφή παγιδευμένο στο γλυκαντικό μέσο, πάστα ξηρών καρπών και άμυλο, ώστε να έχει Aw 0,90-0,92, κατά προτίμηση 0,91 +/- 0,01 και κοκκομετρία 20-30 μm, κατά προτίμηση 20 μm. Η εφεύρεση αφορά επίσης σε μέθοδο παρασκευής του αλείμματος, η οποία μέσω της παστερίωσης και της μηχανικής επεξεργασίας της υγρής φάσης των συστατικών επιτυγχάνει γαλακτοματοποίησή της και σταθερή ανάμιξη με τη λιπόφιλη φάση ρυθμίζοντας έτσι το Aw και δίνοντας στο παραγόμενο άλειμμα λεία και συνεκτική δομή με μεγάλη διάρκεια.
