- 光学活性グリセロールα−モノカルボン酸エステルの合成活性能を有する酵素の存在下、グリセロールをアシル供与体でエステル化を行うことによる光学活性グリセロールα−モノカルボン酸エステルの製造方法において、アシル供与体に、無水 n- 吉草酸又は無水ピバル酸を使用することを特徴とする光学活性グリセロールα−モノカルボン酸エステルの製造方法。
- 酵素が微生物由来のものである請求項1に記載の方法。
- 微生物がアスペルギルス( Aspergillus ) 属、リゾプス( Rhizopus )属、ペニシリウム( Penicillium ) 属、ゲオトリカム( Geotrichum )属、ムコール( Mucor ) 属、リゾムコール( Rhizomucor )属、フミコラ( Humicola )属、シュードモナス( Pseudomonas ) 属、バークホーデリア( Burkholderia )属、キャンディダ( Candida ) 属、ブレビバクテリウム( Brevibacterium )属、コリネバクテリウム( Corynebacterium ) 属、ノカルディア( Nocardia )属、セデセア( Cedecea ) 属、バチルス( Bacillus )属、プロテウス( Proteus ) 属又はメチロバクテリウム( Methylobacterium )属の群から選ばれる少なくとも1種である請求項2に記載の方法。
