Description
[0002]本発明は、全般には食品組成物、詳細には、比較的多量の中鎖トリグリセリドを一体的に包含する食品組成物に関する。
[0014]用語「食品組成物」には、ヒト用であるか動物用であるかにかかわらず、食品、飼料、スナック、栄養補助食品、トリート、代用食又は置換え食の一切が含まれる。動物用食品には、任意の家畜種又は野生種用の食品又は飼料が含まれる。好ましい実施形態では、動物用食品は、栄養的に完全な食品又は食餌組成物、例えば、ペレット化された、押出成形された、又は乾燥した食品を表す。そのような動物用食品の例としては、イヌ用及びネコ用の食品などの押出成形されたペット用食品が挙げられる。
式中、R’、R’’及びR’’’は、グリセロール骨格にエステル化された、炭素骨格中に5〜12個の炭素を有する脂肪酸である。本発明の構造脂質は、直接エステル化、転位、分画、トランスエステル化など、当技術分野で公知の任意のプロセスにより調製し得る。例えば、脂質は、元になる植物油(ココナッツ油など)から、転位プロセスなどにより調製又は誘導してもよい。鎖長の長さ及び分布は、元になる油次第で変化し得る。例えば、C6を1〜10%、C8を30〜60%、C10を30〜60%、C10を1〜10%含有するMCTは、ヤシ及びココナッツの油から一般に誘導される。R1、R2及びR3にC8を約95%超含有するMCTは、グリセリンへのオクタン酸の半合成エステル化により作製できる。合計約50%のC8及び/又は合計約50%のC10を有するMCTを含む混合物も、本発明において有用である。前述のMCT組成物のための元になる市販品は入手可能であり、当業者には公知である。そのようなMCTは、同様に作用し、用語MCT内に包含される。
[0026]一態様では、本発明は、タンパク質約1〜60%と、炭水化物約1〜50%と、MCT脂肪約1〜40%と、維持量の少なくとも1つのMCT維持成分とを含む食品組成物であって、該MCT脂肪由来のMCTが、該食品組成物中に一体的に包含され、該食品組成物の約2〜10%を構成する食品組成物を提供する。好ましくは、MCTは、該食品組成物の約4〜10%、最も好ましくは該食品組成物の約6〜10%を構成する。本発明は、本発明の食品組成物が、少なくとも1つのMCT維持成分を含めなければ、数パーセントを超えるMCTを安定な様式で保持できないという発見に基づくものである。結果として、このような成分を用いずに調合又は加工された食品組成物は、低品質のものとなりがちである。例えば、脂肪は、容易に分離するか、又は不安定になる。押出成形タイプの食品などの食品組成物は、密度及び体積の点で不適当な属性を有することが多く、嗜好性が低いことがある。しかし、少なくとも1つのMCT維持成分を含ませると、このような限界を克服し、これまでより多くの量のMCTを食品組成物中に首尾よく安定に包含させることが可能になり、同時に食品組成物の品質属性が向上する。
ペット用食品調合品中へのMCT包含
[0060]調合品:押出成形タイプのチキンアンドライス(Chicken and Rice)ドッグフードの高級ペット用食品調合品中にMCTを包含するために、調合品4種を調製した。多量栄養素の密度は、調合品のそれぞれの間で一定に維持した。各調合品は、単位重量当り同量のタンパク質、炭水化物及び脂肪を示した。
1.対照調合品:多様な量のMCTを、元になる調合品中の等量の獣脂と置き換えた。
2.デンプン5%:多様な量のMCTを等量の獣脂と置き換え、同時に、調合品中の第2又は第3の穀類原料(小麦又はトウモロコシミールなど)の代わりに、米又はトウモロコシ由来のデンプンを最大5%で加えた。
3.繊維5%:多様な量のMCTを等量の獣脂と置き換え、同時に、調合品中の第2又は第3の穀類原料(小麦又はトウモロコシミールなど)の代わりに、大豆子葉由来の繊維を最大5%で加えた。
4.高タンパク質グルテンミール:多様な量のMCTを等量の獣脂と置き換え、同時に、調合品中の第2又は第3の穀類原料(小麦又はトウモロコシミールなど)の代わりに、トウモロコシ由来の高タンパク質グルテンミール(タンパク質80%)を最大14%で加えた。

Claims (10)
- タンパク質1〜60%と、炭水化物1〜50%と、食品組成物中に一体的に包含された中鎖トリグリセリド(MCT)4〜10%と、タンパク質60〜95%を含むグルテンミール5〜20%とを含む食品組成物であって、前記食品組成物が前記食品組成物に施用したコーティングをさらに含み、前記コーティングは前記食品組成物に対して2〜7%のMCTを含み、それによって前記食品組成物が総MCTの量が10〜15%となり、前記食品組成物はコーティング中の含まれるMCTよりも多い量の一体的に包含されたMCTを含む、食品組成物。
- 前記グルテンミールが、前記食品組成物の最大14%で加えられたトウモロコシグルテンミールである、請求項1に記載の食品組成物。
- タンパク質20〜32%と、炭水化物30〜50%と、MCTを含む総脂肪5〜20%と、水分15〜25%とを含む、請求項1に記載の食品組成物。
- 前記食品組成物中に一体的に包含されたMCTを5〜8%有する、請求項3に記載の食品組成物。
- 押出成形タイプの食品組成物である、請求項1に記載の食品組成物。
- 1つ又は複数の風味向上剤、嗜好性向上剤、アロマ向上剤及び色向上剤をさらに含む、請求項1に記載の食品組成物。
- 請求項1〜6のいずれか一項に記載の食品組成物を製造する方法であって、
(a)前記MCTの少なくとも第1の部分を、加工作業に先立ちグルテンミールと合わせるステップと、
(b)前記食品組成物を加工するステップと、
(c)前記加工を施された食品組成物に、前記MCTの第2の部分をコーティングとして加えるステップと
を含む方法。 - ステップ(a)における前記加工作業が押出成形であり、(b)における前記加工ステップが前記食品組成物を押出成形するステップである、請求項7に記載の方法。
- 前記コーティングが、MCTの少なくとも第2の部分を含み、前記コーティング中の前記MCTが、前記食品組成物の2から7%を構成する、請求項7に記載の方法。
- 前記コーティングが、さらに1つ又は複数の風味向上剤、嗜好性向上剤、アロマ向上剤又は色向上剤を含む、請求項9に記載の方法。
