乾燥は徐々に行なうことが好ましく、急激に行

乾燥を徐々に行なう具体的方法としては、例え
ば蒸煮大豆を乾燥機室内に入れ、該乾燥機室内を
真空ポンプによつて減圧(真空)にして蒸煮大豆
の含有水分の沸点を下げ、大豆中に含まれている
水分の一部を蒸発させ、自己潜熱で大豆自体を冷
却させる。次に乾燥機室内に過熱水蒸気を導入
し、湿分を吸収させると同時に大豆の品温を上
げ、次に真空ポンプにて水蒸気を外部に排気し、
室内を真空にすると大豆の水分が蒸発し、それに
つれて品温が下がる。これらの操作を繰り返し実

実施例 1

畿ヤクルト製)0.2%含有水溶液1.2中に、25℃
で1時間30分浸漬したのち水切りし、そのまま30
℃で1時間15分放置した。ついでこれをオートク
レーブに入れ、2.5Kg/cm2Gで24分蒸煮したのち冷
却し、これを真空乾燥法にて徐々に乾燥し、水分

実施例 2

ルト製)0.2%含有水溶液1.2中に、24℃で1時
間45分浸漬したのち水切りし、そのまま32℃で1
時間30分放置した。ついでこれをオートクレーブ
に入れ、2.5Kg/cm2Gで15分蒸煮したのち冷却し、
真空乾燥法にて徐々に乾燥し水分18%の早炊き乾
