鮮度の低下以前に細断や、皮をむかれたことにより変色
してしまうものがあり、特に根菜類については著しい。

本発明は上記の事情から、リン酸塩処理などに替る天然
物による安全なカット野菜の変色防止方法について研究
を重ねたところ、コウジ酸が優れた作用を有することを
見出して本発明を完成した。コウジ酸は味噌、醤油等の
発酵食品の製造時に使用されるコウジ酸生産能を有する
微生物によって生産され、市販されている。この発明の
対象となるカット野菜は根菜、葉菜、果菜で経時による
変色が著しい山芋、fがつ、レタス、ナスが好適である
。これらカット野菜をコウジ酸溶液、あるいはコウジ酸
と変色防止作用を増強させるための増強剤の混合溶液に
浸漬、乃至スプレーして接触させるととによシ目的であ
るカット野菜の変色を防止することができる。増強剤と
しては、クエン酸、リンが酸、乳酸等食品に使用できる
有機酸のうち少なくとも一種類から選択される。

じである。結果は表−3に示した。変色していないもの
