するクリームスープの製造法に関する。

料の油脂が分離してスープ表面に油滴を生じ、外
観および風味が好ましくなかつた。またスープ全
体としても蛋白質が凝集して食感がざらつきこれ
らの点でクリームスープのレトルト製品は問題の
あるものであつた。

レトルト処理による変化の起らないスープが得ら
れることを見い出し本発明を完成するに至つた。

本発明で云う油脂とは食品に適した油脂であれ

性油脂が例として挙げられる。このうち特に常温
で固体の油脂を用いた場合本発明の効果が顕著に
得られる。

とレトルト処理後に油脂が分離してしまい好まし

が20μm以下となる程度に行うのが好ましい。こ
の撹拌条件を満足する装置としてはホモミキサ
ー、二軸撹拌機、コロイドミル、ステフアンカツ
ター等の撹拌機を用いるのが好ましい。

量で充填密封し、レトルト釜で120℃において23
分の加圧加熱殺菌を行つた。得られたトマトクリ
ームスープはスープ表面に油滴の浮かないもので
あつた。

このものを200g容レトルトパウチに充填密封し
て120℃において22分間のレトルト殺菌を行つた。

よるレトルト処理を行なつた。
