【発明の詳細な説明】[Detailed description of the invention]

(産業上の利用分野) 本発明は、大豆特有の嫌な風味の極めて少ない
冷菓に関する。更に詳しくは、大豆蛋白とライム
オイルを含有する冷菓を提供するものである。 (従来技術) 従来から大豆蛋白を含有する冷菓が多く知られ
ている。大豆蛋白の持つ乳化性等の機能を利用し
たものが多い。 一方ライムオイルは食品のフレーバーとして、
亦冷蔵庫の消臭剤として、他の柑橘系のフレーバ
ー(レモン油、オレンジ油等)と共に用いられて
いる。 (発明が解決しようとする問題点) 大豆蛋白を冷菓に用いる際の最大の問題点は大
豆特有の嫌な風味が冷菓にマツチしないことにあ
る。 (問題を解決する為の手段) 本発明者等は、前記問題点を解決すべく鋭意研
究の結果、大豆蛋白含有冷菓において、その系中
ライムオイルを1〜10ppm用いることにより問題
を解決できる知見を得て本発明を完成するに到
る。 即ち、本発明は大豆蛋白0.5〜10重量%を含む
系において1〜10ppmライムオイルを含有する冷
菓である。 本発明にいう冷菓は氷菓、アイスクリーム等冷
凍して食するものをいう。 本発明に用いる大豆蛋白は脱脂大豆等から抽出
して得られる大豆蛋白をいい、豆乳、分離大豆蛋
白等をいう。 ライムオイルの量が1ppm未満では冷菓に大豆
の臭が感じられ、10ppmを越えるとライムオイル
の香が強く好ましくない。1〜10ppmの範囲で大
豆臭が冷菓中に感じられなく好ましい。 (実施例) 以下実施例により本発明の実施態様を説明す
る。 実施例 1

(Means for solving the problem) As a result of intensive research to solve the above problem, the present inventors found that the problem can be solved by using 1 to 10 ppm of lime oil in the soybean protein-containing frozen dessert. With this, we have completed the present invention. That is, the present invention is a frozen dessert containing 1 to 10 ppm lime oil in a system containing 0.5 to 10% by weight of soybean protein. Frozen desserts as used in the present invention refer to frozen desserts, ice creams, and other foods that are eaten frozen. The soybean protein used in the present invention refers to soybean protein obtained by extraction from defatted soybeans, etc., and refers to soybean milk, isolated soybean protein, etc. If the amount of lime oil is less than 1 ppm, the frozen dessert will have a soy odor, and if it exceeds 10 ppm, the scent of lime oil will be strong and undesirable. It is preferable that the soybean odor is not felt in the frozen dessert within the range of 1 to 10 ppm. 嫌な風味が極めて少ない大豆蛋白含有冷菓が可能
になつたものである。
