蔵し食品に供することのできる充填豆腐(以下、
LL充填豆腐という。)の製造法に関する。 (従来の技術) 従来より、木綿豆腐、無菌豆腐、充填豆腐、レ
トルト豆腐等として種々の豆腐が知られており、
また種々の製造法が提案されている。 一例を挙げれば、特公昭59−21586号公報には、
木綿様豆腐の製造法について記載されており、
(以下、この方法を従来法という)、これは、「常
法によつて得られた豆乳を120℃以上の温度で殺
菌し、冷却し、これに凝固剤を添加し、カードを
形成せしめ、次いで遠心分離機で脱水してカード
の水分含有量を78〜90重量%に調整し、脱水した
カードを容器に充填し、密封し、加熱することに
より、木綿様豆腐を製造する方法」(特許請求の
範囲)である。 この従来法において、使用される豆乳は、常法
により製造されたものであつて、その固形分含量
は3〜12重量%に調整されたものであり(同公報

(同公報6欄12〜19行)。 (発明が解決しようとする課題) 上記従来法によれば、製品の原料となる豆乳
は、常法により得られた丸大豆の豆乳を用いてお
り、この豆乳中に、豆腐の腐敗の最大原因たる耐
熱性胚芽菌が100%包含されている。 従つて、この方法では、無菌の製品を製造する
ため、豆乳の状態で一次殺菌を行つているが、前
記公報第6頁の第3表に記載されるように、製造
直後は細菌数も少なく、風味等も良好と判定され
たものが、7日目以後細菌数が増加し、30日目の
ものは細菌数が格段に増加し、風味に欠けるもの
と判定されている。 そして、この方法は、他の市販豆腐等よりも保
存性の良好な豆腐が得られるものと理解できる
が、30日以上経過した豆腐は、味覚の劣化が激し
く、且つ、細菌数の増加による悪影響から、到底
食品として長期間保存可能のもの、例えば常温で
約半年、低温で1年間程度の長期間保存可能な豆
腐を得ることは、困難であつた。 また、従来より、豆腐製造工程における殺菌と
して、常法によつて得られた豆乳を120℃以上の
温度で一度のみ行なう、いわゆる一次殺菌法を採
用するものも存在するが、これでは、完全に殺菌
することが極めて困難であるばかりでなく、該豆
乳に凝固剤を添加し、容器に充填する砕、例えば
無菌室を準備して慎重に包装せざるを得ない等配
慮を必要とし、手間がかかり、また、このような
条件下では、複雑な設備が必要であるという欠点
を有していた。 更に、従来より、二次殺菌として、110℃以上
の高温水中で殺菌する方法も知られているが、こ
の二次殺菌法では、無菌豆腐を製造するため、高
温水中で長時間にわたつて殺菌処理をしなければ

グルコノデルタラクトンの添加量は、豆乳に対し
0.3重量%程度であり、にがりでは、2重量%程
度である。 これに対して、本発明では、グルコノデルタラ
クトンの添加量は、従来のほぼ半量の0.14〜0.24

110℃以上の高温水で30〜45分間加熱することに
より、完全に凝固させることができるものであ
る。 また、本発明において、凝固剤として、グルコ
ノデルタラクトンを用いず、にがりを単独で使用
することもできるが、この場合のにがりの添加量
は、12度ボーメ換算で0.8〜1.4重量%である。 この添加量範囲の技術的意義は、上記と同様で
あるが、このにがり単独使用であつても、その添
加量は、従来のほぼ半量であり、この量であつて
も、次の(e)工程である110℃以上の高温水で30〜
45分間加熱することにより、完全に凝固させるこ
とができるものである。 なお、にがりとしては、海水から食塩を製造す
る際副産物として得られるものを使用するほう
が、入手容易の点から好ましいが、本発明は、特
にこれに限定するものではなく、他のMgCl2を主
成分とするものであれば、いずれも使用すること
ができる。 また、本発明において、12度ボーメのにがりを
用いる方が、これも入手容易の点から好ましい
が、本発明は、特にこれに限定するものではな
く、如何なるボーメのにがりをも使用することが
できる。 [(e)工程] 上記凝固剤を添加した後、容器に充填、密封し
((d)工程)、次いで、(e)工程に示すように、該容器
を110℃以上の高温水で30〜45分間加熱処理し、
完全殺菌、完全凝固させる。 (作用) 充填豆腐製品の優劣、質、味覚等は、豆乳の
量、濃度、温度、凝固剤の種類、量、加熱手段、
温度、時間、F値の取り方更には冷却の仕方等が
微妙に作用し合うものであるが、本発明は、前記
のとおりの構成((a)〜(e)の工程)としたので、こ
れらを完全にコントロールすることが可能とな
り、長期間保存可能な良質な充填豆腐を得ること
ができる。 即ち、本発明は、まず、原料大豆として脱皮大
豆を用いるものであり、これによつて、豆腐の腐
敗の最大原因たる耐熱性芽胞菌を除去することが
できる。 ところで、従来より脱皮大豆を使用することが
知られているが(特開昭60−149354号公報参照)、
本発明は、特に、脱皮大豆を原料とし((a)工程)、
かつ、凝固剤として、グルコノデルタラクトンと
にがり、又は、にがり単独を使用するが、その添
加量を従来のほぼ半量とし((d)工程)、更に、高
温水による加熱処理((e)工程)を採用するもので
あり、この各工程の組合せによつて、製品の優
劣、質、味覚等を完全にコントロールすることが
できる作用が生ずる。 通常、豆乳を100℃以上の高温で長時間加熱す
ると、豆腐の品質(風味等)を損ねるものであ
り、そのため、従来は、例えば120℃では数秒で
あり、また、45〜50分間加熱する場合であつて
も、80〜90℃と、100℃以下の加熱処理が採用さ
れているものであるが、本発明は、上記(a)〜(d)工
程を組合せにより、(e)工程の「110℃以上の高温
水で30〜56分間加熱処理」を採用しても、上記の
ような豆腐の品質(風味等)に影響を与えないも
のと考えられる。 そして、本発明は、常温で約半年、低温で一年
間程度の長時間保存しても、味覚の劣化が殆どな
いLL充填豆腐が得られる。 (実施例) 以下、本発明の実施例を挙げ、本発明を詳細に
説明する。 第1図は、本発明の一実施例の製造工程図であ
つて、1は原料、2〜13は、前記本発明の(a)〜
