ては、あまり積極的には利用されていないのが現
状であり、簡単に煮熟可能な豆類の出現が望まれ
ていた。

ゼ及びペクチナーゼ含有水溶液に浸漬膨潤させた
のち水切り放置し、次いで蒸煮、冷却後、乾燥処
理することにより早煮豆が得られるという知見を
得た。

よつて短時間に復元し直ちに即席ぜんざい、即席
茹豆、即席あん等、即席食品に用いられる乾燥豆
の製造法であり、短時間で煮熟可能な早煮豆の製
造法とはその目的を異にし、またこの方法は豆類
を水中で煮沸したのち乾燥するのに対し、本発明
は蒸気で蒸煮したのち乾燥する方法であるから、
得られる製品の品質、例えば豆の形状、色等が全
くことなるものなのである。

本発明の対象となる豆類はあづき類、ささげ

タンパク質を主成分とする豆類である。

洋醸造)、ドリセラーゼ(協和醗酵)、セルロシン
(上田化学)等を、ペクチナーゼとしてはマセロ
チーム(ヤクルト)、スミチームMC(新日本化
学)等、市販の酵素を用いることができる。

適温度で0.5〜2時間程度行なう。

類に含まれている水分の一部を蒸発させ、自己潜
熱で豆類自体を冷却させる。次に乾燥機室内に過
熱水蒸気を導入し、湿分を吸収させると同時に豆
類の品温を上げ、次に真空ポンプにて水蒸気を外
部に排気し室内を真空にすると豆類の水分が蒸発
し、それにつれて品温が下がる。これらの操作を
繰り返し実施し漸次乾燥を行つていく。

時間浸漬したのち水切りした。この時の水分含量
は57.0%であつた。
