Claims (1)
- 【特許請求の範囲】 1.表面に外皮のないよう加熱処理された肉片を含む肉製品を調理する方法であ って、肉を気密調理室内に配置する段階と、水源から蒸気を発生させる段階と、 蒸気を気密調理室内に導入する段階と、肉を蒸気で加熱処理する段階と、蒸気を 用いて気密調理室内に100%の雰囲気湿度を生じさせる段階とを有し、100 %の雰囲気湿度により、肉中に存在している水が調理室の雰囲気中へ蒸発するの を防止することを特徴とする方法。 2.調理室内の圧力を減少させて150°F〜180°Fの範囲の低温蒸気を生 じさせる段階を更に有することを特徴とする請求項1記載の方法。 3.蒸気の発生に用いられる前記水源は、風味付き成分を含み、風味付き成分は 、肉が蒸気で加熱処理されているときに特定の風味を肉に添えることを特徴とす る請求項1記載の方法。 4.風味付き成分は、液くんを含むことを特徴とする請求項3記載の方法。 5.蒸気が所定の期間にわたって肉を加熱処理したあと、調理室内の圧力を減少 させる段階を更に有し、圧力の減少により、水分が肉の表面から沸騰消失し、薄 皮層が肉表面上に生じることを特徴とする請求項1記載の方法。 6.皮なし肉製品を調理する方法であって、肉片を気密調理室内に配置する段階 と、水源から蒸気を発生させる段階と、蒸気を気密調理室内に導入する段階と、 肉を蒸気で加熱処理する段階と、蒸気を用いて気密調理室内に100%の雰囲気 湿度を生じさせる段階とを有し、100%の雰囲気湿度により、肉中に存在して いる水が調理室の雰囲気中へ蒸発するのを防止することを特徴とする方法。 7.調理室内の圧力を減少させて150°F〜180°Fの範囲の低温蒸気を生 じさせる段階を更に有することを特徴とする請求項6記載の方法。 8.蒸気の発生に用いられる前記水源は、風味付き成分を含み、風味付き成分は 、肉が蒸気で加熱処理されているときに特定の風味を肉製品につけることを特徴 とする請求項6記載の方法。 9.風味付き成分は、液くんを含むことを特徴とする請求項8記載の方法。 10.蒸気が所定の期間にわたって肉を加熱処理したあと、調理室内の圧力を減少 させる段階を更に有し、圧力の減少により、水分が肉の表面から沸騰消失し、薄 皮層が肉表面上に生じることを特徴とする請求項6記載の方法。 11.肉製品の調理装置であって、気密調理室と、肉製品を気密調理室内に保持す る手段と、蒸気を発生させて蒸気を気密調理室内で循環させる手段と、気密調理 室内に100%の雰囲気湿度を生じさせる手段とを有することを特徴とする装置 。 12.調理室内の圧力を減少させて低温蒸気を生じさせる圧力制御手段を更に有す ることを特徴とする請求項11記載の装置。 13.調理室内の圧力を減少させて水分が肉の表面から沸騰消失し、薄皮層が肉表 面上に生じるようにするための圧力減少手段を更に有することを特徴とする請求 項11記載の装置。 14.圧力減少手段は、真空ポンプを含むことを特徴とする請求項13記載の装置 。 15.圧力減少手段は、気密調理室を貫通する管を含み、冷媒が前記管を通って循 環することを特徴とする請求項13記載の装置。 16.圧力減少手段は、気密調理室を貫通する管を含み、冷水が前記管を通って循 環することを特徴とする請求項13記載の装置。 17.圧力減少手段は、気密調理室内への冷水スプレーを含むことを特徴とする請 求項13記載の装置。
