- 【特許請求の範囲】 1. 糖増量剤又は無糖増量剤から菓子を製造する方法であって、搬送の下流 方向に、 a)複数の加熱ゾーンを備えた二軸スクリュー押出機のバレル内に増量剤を導 入する; b)第一の一続きの加熱ゾーン内で該増量剤を押出混合して該増量剤を溶融さ せる、この際、該第一の一続きの加熱ゾーンは、該増量剤を溶融させるのに最小 な時間を包含するように配置されている; c)該溶融した増量剤を該第一の一続きの加熱ゾーンからオリフィスプラグま で押出混合する、この際、該オリフィスプラグは、該増量剤を溶融させるのに最 小な時間を包含するように配置されている; d)該溶融した増量剤を、該オリフィスプラグから圧力制御バルブを有する加 熱ゾーンまで押出混合する、この際、該圧力制御バルブは、該増量剤を溶融させ るのに最小な時間を包含するように配置されている; e)該溶融した増量剤を、該圧力制御バルブを有する該加熱ゾーンからガス抜 き口を有する加熱ゾーンまで押出混合する、この際、該ガス抜き口は、菓子の水 分を約2%未満に減少させるのに最小な蒸発時間を包含するように配置されてい る;及び f)該溶融した増量剤を、該ガス抜き口を有する該加熱ゾーンから該押出機の 出口まで押出混合してガラス状菓子を形成する; という工程をこの順で含む方法。 2. 糖増量剤又は無糖増量剤が、単糖類、二糖類、多糖類、糖アルコール、 ポリデキストロース、マルトデキストリン、水素化ヘキソース、水素化二糖類、 及びそれらの混合物からなる群から選択される、請求項1の方法。 3. 増量剤が、キシロース、リブロース、グルコース(デキストロース)、 マンノース、ガラクトース、フルクトース(レブロース)、スクロース、マルト ース、転化糖、部分加水分解澱粉、コーンシロップ固体、及びそれらの混合物か らなる群から選択される糖である、請求項2の方法。 4. 増量剤が、ソルビトール、キシリトール、マンニトール、ガラクチトー ル、マルチトール、イソマルト、水素化澱粉加水分解物、及びそれらの混合物か らなる群から選択される糖アルコールである、請求項2の方法。 5. 増量剤がイソマルトと水素化澱粉加水分解物との混合物である、請求項 4の方法。 6. 増量剤がイソマルトである、請求項4の方法。 7. 増量剤が、二軸スクリュー押出機のバレル内にスクリュー供給装置を介 して供給される、請求項1の方法。 8. 第一の一続きの加熱ゾーンが、搬送の下流方向に、順向供給スクリュー 、順向圧縮スクリュー、逆向ねじスクリュー、及び順向圧縮スクリューをそれぞ れ包含するように配置されている、請求項1の方法。 9. オリフィスプラグが、材料の流れを制御できるように2つのオリフィス ディスクを包含するように配置されている、請求項1の方法。 10.圧力制御バルブが、水蒸気を該押出機から逃がせるように制御装置を包 含するように配置されている、請求項1の方法。 11.圧力制御バルブを有する加熱ゾーンが、更に順向供給スクリューを含む 、請求項1の方法。 12.ガス抜き口が、水蒸気を該押出機から逃がせるように減圧装置を包含す るように配置されている、請求項1の方法。 13.ガス抜き口を有する加熱ゾーンが更に順向混合羽根含む、請求項1の方 法。 14.ガス抜き口を有する加熱ゾーンと押出機の出口の間に順向圧縮スクリュ ーを更に含む、請求項1の方法。 15.複数の加熱ゾーンを備えた該二軸スクリュー押出機が、搬送の下流方向 に9ゾーンを含む方法であって、ゾーン1が順向供給スクリューを含み、ゾーン 2が順向供給スクリューを含み、ゾーン3が順向圧縮スクリューを含み、ゾーン 4が逆向ねじスクリューを含み、ゾーン5が順向圧縮スクリューとオリフィスプ ラグを含み、ゾーン6が順向供給スクリューと圧力制御バルブを含み、ゾーン7 が順向混合羽根とガス抜き口を含み、ゾーン8が順向供給スクリューを含み、そ してゾーン9が順向圧縮スクリューを含む、請求項1の方法。 16.搬送の下流方向に、 a)複数の加熱ゾーンを備えた二軸スクリュー押出機のバレル内に増量剤を導 入する; b)該押出機の第一の一続きの加熱ゾーン内で該増量剤を押出混合して該増量 剤を溶融させる、この際、該第一の一続きの加熱ゾーンは、該増量剤を溶融させ るのに最小な時間を包含するように配置されている; c)該溶融した増量剤を該第一の一続きの加熱ゾーンからオリフィスプラグま で押出混合して通過させる、この際、該オリフィスプラグは、該増量剤を溶融さ せるのに最小な時間を包含するように配置されている; d)該溶融した増量剤を、該オリフィスプラグから圧力制御バルブを有する加 熱ゾーンまで押出混合して通過させる、この際、該圧力制御バルブは、該増量剤 を溶融させるのに最小な時間を包含するように配置されている; e)該溶融した増量剤を、該圧力制御バルブを有する該加熱ゾーンからガス抜 き口を有する加熱ゾーンまで押出混合して通過させる、この際、該ガス抜き口は 、菓子の水分を約2%未満に減少させるのに最小な蒸発時間を包含するように配 置されている;及び f)該溶融した増量剤を、ガス抜き口を有する該加熱ゾーンから該押出機バレ ルの出口まで押出混合して通過させて、最小限の気泡しか有さないガラス状菓子 の形態にある溶融した増量剤を形成する; という工程をこの順で含む方法により製造される、糖増量剤又は無糖増量剤を含 む菓子。 17.糖増量剤又は無糖増量剤が、単糖類、二糖類、多糖類、糖アルコール、 ポリデキストロース、マルトデキストリン、水素化ヘキソース、水素化二糖類、 及びそれらの混合物からなる群から選択される、請求項16の菓子。 18.増量剤が、キシロース、リブロース、グルコース(デキストロース)、 マンノース、ガラクトース、フルクトース(レブロース)、スクロース、マルト ース、転化糖、部分加水分解澱粉、コーンシロップ固体、及びそれらの混合物か らなる群から選択される糖である、請求項17の菓子。 19.増量剤が、ソルビトール、キシリトール、マンニトール、ガラクチトー ル、マルチトール、イソマルト、水素化澱粉加水分解物、及びそれらの混合物か らなる群から選択される糖アルコールである、請求項17の菓子。 20.増量剤がイソマルトと水素化澱粉加水分解物との混合物である、請求項 19の菓子。 21.増量剤がイソマルトである、請求項19の菓子。 22.複数の加熱ゾーンを備えた二軸スクリュー押出機が、搬送の下流方向に 9ゾーンを含む請求項19の菓子であって、ゾーン1が順向供給スクリューを含 み、ゾーン2が順向供給スクリューを含み、ゾーン3が順向圧縮スクリューを含 み、ゾーン4が逆向ねじスクリューを含み、ゾーン5が順向圧縮スクリューとオ リフィスプラグを含み、ゾーン6が順向供給スクリューと圧力制御バルブを含み 、ゾーン7が順向混合羽根とガス抜き口を含み、ゾーン8が順向供給スクリュー を含み、そしてゾーン9が順向圧縮スクリューを含む、請求項19の菓子。
