Description
Claims (1)
- 【特許請求の範囲】 1.フライド・スナックを製造する方法であって、 (a)(1) 蛋白質6%〜15%を含有するデンプンをベースとし、糊化デン プンと非糊化デンプンの比が15:85〜65:35である穀粉 の原料35%〜60%と、 (2) 予めゼリー化した変性デンプン2%〜20%と、 (3) 乳化剤0.5%〜3%と、 (4) 添加する水25%〜55%と、 (5) ショートニングまたはオイル0.5%〜5%と、 (6) パン種0.2%〜5%と を含む混合物を、500psig〜1500psigの圧力および華氏70 度(21℃)〜華氏150度(65.5℃)の温度で押し出し成形するステップ と、 (b) 0.02〜0.05インチ(0.05〜0.13cm)の成形オリ フィスを通して形成された生地混合物を押し出し成形し、少なくとも 0.3cmの厚さに切断されたスナック片を形成するステップと、 (c) 前記スナック片をフライにするステップと を含むことを特徴とする方法。 2.前記デンプンをベースにした穀粉が、トウモロコシ練り粉、トウモロコシ粉 、ポテト・フレーク、ポテト細粒とこれらの混合物からなるグループから選択さ れることを特徴とする請求項1に記載の方法。 3.前記乳化剤が、ヨー素価50〜110のジアセチル酒石酸モノグリセリド脂 肪酸エステルであることを特徴とする請求項1または2に記載の方法。 4.生地が、少なくとも25%〜40%の添加される水を含むことを特徴とする 請求項3に記載の方法。 5.前記パン種が、重炭酸ナトリウムまたは重炭酸カリウムと、炭酸カルシウム からなるグループから選択されることを特徴とする請求項4に記載の方法。 6.前記乳化剤が、炭素原子12個〜22個を有する脂肪酸のポリグリセロール エステルであることを特徴とする請求項1または2に記載の方法。 7.前記乳化剤が、炭素原子12個〜22個を有する脂肪酸のモノグリセリドと ジグリセリドとの混合物であることを特徴とする請求項1または2に記載の方法 。 8.生地から形成され、3%未満の水および20%〜40%の脂肪を有するフラ イド・スナック片であって、 (1) 蛋白質6%〜15%を含有するデンプンをベースとし、糊化デンプン と非糊化デンプンの比が15:85〜65:35である穀粉の原料 35%〜60%と、 (2) 事前ゼリー化変性デンプン2%〜20%と、 (3) 乳化剤0.5%〜3%と、 (4) 添加する水25%〜55%と、 (5) ショートニングまたはオイル0.5%〜5%と、 (6) パン種0.2%〜5%と を含み、20%〜32%の脂肪含有量を有することを特徴とするフライド・スナ ック片。 9.前記穀粉が、トウモロコシ練り粉、コーン・スターチ、ポテト・フレーク、 ポテト細粒、小麦粉とこれらの混合物からなるグループから選択されることを特 徴とする請求項8に記載のスナック。 10.前記生地が、カルシウムと他のビタミンとミネラルとの混合物をさらに含 むことを特徴とする請求項1に記載の方法。
