Abstract
PURPOSE: In the emulsification of vitamin E with an emulfier, a neutral aminoacid is incorporated, thus producing said antioxidant for food of emulsified vitamine E with high stability against the time passage.
CONSTITUTION: To vitamin E as α,β,γ,δ-tocopherol are added 10W80 wt%, preferably 30W70 wt%, based on the vitamin E, of an emulsifier, such as glycerol fatty acid ester, sugar fatty acid ester, natual gum, lecithin, etc., and 5W80 wt%, preferably 10W60 wt% of a neutral aminoacid, such as alanine, glycine, serine, valine, leucine, threonine, lsoleucine, etc., in the form of an aqueous solution and the mixture is emulsified by means of a homomixer to give said vitamin E emulsion useful as antioxidant for food with high stability against the time passage.
