Abstract
PURPOSE: To obtain dried saltless umes useful as a health food, by drying unripe umes steeped in a seasoning liquid consisting mainly of edible vinegar under pressure.
CONSTITUTION: Unripe umes (preferably a ripening degree of 90%) are steeped in a seasoning liquid consisting mainly of edible vinegar and suitable flavorings, pressed by a stone as a weight, and maintained for 20W30 days. The umes are then dried to give the desired dried saltless umes with a moisture content ≤30W40%.
