Abstract

PURPOSE: To prevent the deterioration of a bean jam not yet sweetened with sugar, by adding and mixing a hydrogenated starch sirup with the bean jam not yet sweetened with sugar.
CONSTITUTION: A starch is hydrolyzed to an intermediate step to give a mixture of mono-, di- and oligosaccharides with dextrin etc., which is then hydrogenated to afford a hydrogenated starch sirup. The resultant hydrogenated starch sirup is added to and mixed with a bean jam not yet sweetened with sugar. The amount of the hydrogenated starch sirup is usually in the range of 5W50% based on the bean jam not yet sweetened with sugar.
