Abstract

PURPOSE: An enzyme composition for preparing saccharoses obtained by blending amylase producing mainly amylase with transglycosidase, and preparation of saccharoses for brewing consisting essentially of a nonfermentable oligosaccharide made from the enzyme composition.
CONSTITUTION: An enzyme composition obtained by blending amylase producing amylase mainly with transglycosidase in a ratio as titer of one unit to 0.4W0.8 unit. The enzyme composition is added to liquefied starch in such a way that an amount of amylase is not more than 250 unit based on 1g of the total saccharoses of the starch. The liquefied starch is reacted with the enzyme composition at 50W60°C, in pH 5.0W6.0, for 1W3 days to give a starch saccharified solution having a ratio of nonfermentable saccharose, e.g., isomaltose, panose, isomaltotriose, nigerose, etc. about 50% and a ratio of oligosaccharide including limit dextrin of 78W85%.
