Abstract

PURPOSE:To manufacture a highly stabilized oil in water type emulsion by preparing a nonaqueous emulsion in the first stage by using an ionic surfactant for raising the degree of emulsification. CONSTITUTION:In the manufacture of an oil in water type emulsion, a stable nonaqueous emulsion is prepared in the first stage by mixing an ionic surfactant, e.g., a fatty acid soap, etc., a polyhydric alcohol, e.g., propylene glycol, etc., and an oil phase component, e.g., olive oil, etc. Then, in the second stage, water is added to the nonaqueous emulsion to manufacture a stable oil in water type emulsion. Thus, an excellently stabilized emulsion can be manufactured by using an ionic surfactant having a weak emulsifying power.
