Abstract
PURPOSE: To obtain a cheese-containing drink exhibiting a stable dispersed state, by using xanthan gum.
CONSTITUTION: In dispersing a cheese, e.g., natural cheese, processed cheese, etc. into water, xanthan gum is added to the cheese, and it is heat-treated. Besides xanthan gum, natural gum, emulsifying agent, and other additive may be used together with it to increase effects. Fruit juice, essence, etc. may be added to improve the taste.
