Abstract

PURPOSE:To increase the thermal stability of aspertame and prevent the reduction in sweetness at high temperatures, by incorporating dried honey with an artificial sweetener aspartame. CONSTITUTION:An artificial sweetener obtained by incorporating a small amount of dried honey with an artificial sweetener aspartame. The compounding ratio of the dried honey to the aspartame is 1:about 0.008-0.02. The aspartame is very stable at ordinary temperature, but decomposed at high temperatures in a very short time. Therefore, the sweetness is reduced with time if added to, e.g. cooked materials or hot coffee. The mixed use of both provides better flavor than in use of the dried honey alone.

ルテームが熱から守られる機構は不明であるが、アスパ
ルテームと乾燥蜂蜜の相乗作用によってそれぞれの欠点
を補い合い、アスパルテームの熱による分解は乾燥蜂蜜
によって守られ、乾燥蜂蜜の欠点である甘みの不足はア
スパルテームの甘みによって補われ、かつ風味の点でも
損われることがない。それゆえ本発明による混合物は、
その熱安定性のため人工甘味料としての利用範囲を飛躍
的に拡大するものである。なお、本発明における乾燥蜂
蜜のかわりに普通の蜂蜜を用いてもよいが、実際に分包
して使用するうえで粉末が扱いやすいので乾燥蜂蜜の方
が好ましい。
