Abstract

PURPOSE:To produce the title material having good texture and keeping its good taste for a long period of time, by adding a large amount of water to a starting mixture of oil plant seed protein and wheat gluten, kneading in an extruder under pressure at elevated temperature and extruding out without swelling, as the extruder is cooled at the nozzle end. CONSTITUTION:A large amount of water is added to a protein food material made from oil plant seed protein and wheat gluten and the mixture of high water content is heated and kneaded in an extruder provided with twine screws 11. Then, the kneaded mixture is extruded out from the nozzle 3 at the end of the extruder 10, as it is cooled down at the cooling zone 15 so that the mixture may not swell by flushing of the water in the mixture.
