Abstract
La présente invention concerne un procédé de conversion enzymatique d'un saccharide en tagatose. L'invention concerne également un procédé de préparation de tagatose, le procédé impliquant la conversion de fructose 6-phosphate (f6p) en tagatose 6-phosphate (t6p), catalysée par une épimérase, et la conversion de t6p en tagatose, catalysée par une phosphatase.
