Abstract
Invenţia se referă la industria laptelui, în special la un procedeu de producere a brânzei.Procedeul de producere a brânzei include coagularea laptelui, presarea pe etape, sărarea şi maturarea, inspectarea şi separarea brânzei necondiţionate, carese fărâmiţează, se tratează cu fază lichidă în raportul de masă brânză:fază lichidă de 1:(1…3) la temperatura de 20±2ºC în decurs de 2,0…2,5 ore. Faza lichidă se îndepărtează, iar brânza fărâmiţată se amestecă cu un adaos formator de structură şi se presează în două etape: la prima etapă la o sarcină de 1,0…1,8 kg la 1 kg de brânză timp de 2,5…3,0 ore, iar la etapa a doua la o sarcină de 2,5…3,0 kg la 1 kg de brânză timp de 3,5…4,0 ore.În calitate de fază lichidă se foloseşte zer din brânză de vacă sau soluţie apoasă, care conţine sare de bucătărie 2% şi acid lactic 0,5%. În calitate de adaos formator de structură se foloseşte pectină şi/sau amidon modificat, şi/sau karaghenan, şi/sau xantan, şi/sau cazeină.Rezultatul invenţiei constă în eliminarea defectelor brânzei şi în obţinerea produsului cu indici de calitate înalţi şi stabili.
