Abstract
Inventia se refera la industria alimentara, si anume la un procedeu de rehidratare a fructelor deshidratate de visin si cires.Procedeul, conform inventiei, prevede cufundarea fructelor deshidratate cu sau fara sâmburi în apa cu temperatura de 20…80°C, totodata durata cufundarii se calculeaza conform formulei:,unde:τ - durata cufundarii, h;G1 - masa fructelor deshidratate, cu exceptia sâmburilor, kg;G2 - masa fructelor rehidratate, cu exceptia sâmburilor, kg;F - suprafata fructelor deshidratate, raportata la o unitate de masa de substanta uscata din fructe, m2/kg;S1 - masa substantelor uscate în fructele deshidratate, kg;I - viteza de acumulare a umiditatii, kg/kg s.u./h·m2;&kgr;p, &kgr;t - coeficienti de corectie.Rezultatul consta în asigurarea posibilitatii de dirijare a procesului de rehidratare în diferite conditii de realizare a acestuia.
