Abstract
Invenţia se referă la industria alimentară, şi anume la un procedeu de rehidratare a fructelor deshidratate de vişin şi cireş.Procedeul, conform invenţiei, prevede cufundarea fructelor deshidratate cu sau fără sâmburi în apă cu temperatura de 20…80°C, totodată durata cufundării se calculează conform formulei:, unde:τ - durata cufundării, h;G1 - masa fructelor deshidratate, cu excepţia sâmburilor, kg;G2 - masa fructelor rehidratate, cu excepţia sâmburilor, kg;F - suprafaţa fructelor deshidratate, raportată la o unitate de masă de substanţă uscată din fructe, m2/kg;S1 - masa substanţelor uscate în fructele deshidratate, kg;I - viteza de acumulare a umidităţii, kg/kg s.u./h·m2;kp, kt - coeficienţi de corecţie.Rezultatul constă în asigurarea posibilităţii de dirijare a procesului de rehidratare în diferite condiţii de realizare a acestuia.
