Abstract
La invención se relaciona con la fabricación de productos lácteos fermentados concentrados. La invención permite mejoras en el uso de los materiales y subproductos, así como en las propiedades del producto obtenido. Se usan unas bacterias ácido lácticas que tienen una baja capacidad de metabolización de la lactosa en suero lácteo ácido.
