Abstract
Hyllestabile, upasteuriserte matprodukter med svært lav pH-verdi og med redusert surhet, samt fremgangsmåter for fremstilling av slike produkter. Disse matprodukter fremstilles uten pasteurisering eller annen varmebehandling ved surgjøring av en matvare med et surt elektrodialysert membranmateriale (ED), og/eller tilsetning av spiselige uorganiske syrer og/eller deres metallsyresalter, for å tilveiebringe svært lave pH-verdier, så som pH 3,5 eller lavere, spesielt 3,2 eller lavere, hvor det totale organiske syreinnhold er 0,22 mol pr. 1000 g av matprodukt eller mindre, effektivt til å forbedre hyllestabiliteten, men uten å innføre noen ubehagelig sur smak eller på annen måte å forringe organoleptiske egenskaper ved de resulterende matprodukter.
