Abstract

Det beskrives en forbedret fremgangsmåte for fremstilling av sakkaridfettsyrepolyestere ved hjelp av en to-trinns pro- sess. I det første trinnet forestres et sakkarid partielt slik at det i gjennomsnitt inneholder mellom ca. 1,5 og 3,5 lavere acylestergrupper. I det andre trinnet omsettes det partielt forestrede sakkaridet med et fettsyre-holdig reagens (f.eks. fettsyrer, fettsyreestere, salter av fettsyreestere eller fettsyreanhydrider) hvorved de lavere acylestergruppene og hydroksylgruppene i det partielt forestrede sakkaridet erstattes med fettsyreestergrupper i en transforestrings- reaksjon for å danne sakkaridfettsyrepolyestere. Bruken av et partielt forestret sakkarid som reaktant i transforestrings- reaksjonen gj or det mulig å oppnå et mer homogent reaksjons- system, mindre karamellisering eller andre spaltningsreaksjon- er, og mindre dannelse av ester-biprodukter med lav molekyl- vekt. sakkaridfettsyrepolyesterne, spesielt sukrosefettsyre- polyesterne er anvendbare som fetterstatninger eller fett med lavt kalori-innhold i næringsmiddelblandinger.
