Abstract
Oppfinnelsen angår egg royale og en fremgangsmåte for fremstilling av egg royal ved koagulering av masse inneholdende hele egg, kjennetegnet ved at en forblanding inneholdende mer enn 10 vekt% fuktighet blir produsert av melkepulver, hele egg, hevemiddel og krydderier. Forblandingen blir agglomerert, og påført i tynne lag komprimert med en rulle, på et dampbelte på hvilket masselaget blir behandlet med superoppvarmet damp i tilstrekkelig lang tid til at koagulering av eggehvitene finner sted.
