Abstract

Un procedimiento para secar productos alimenticios con alto contenido de azucar, tal como miel y melaza, en una camara de microondas al vacio. El procedimiento comprende cargar el producto alimenticio en la camara de vacio y exponer el producto alimenticio a una presion de vacio en el intervalo de 45 a 250 Torr (60 a 333 mbar) en la camara de vacio mientras se irradia el producto alimenticio con radiacion de microondas. Esto seca el producto alimenticio y forma una estructura porosa. El procedimiento minimiza o evita la formacion de espuma y seca el producto a una temperatura que evita que se queme, al tiempo que reduce el contenido de humedad a un nivel muy bajo.
