Abstract

The process of producing breadnut (Artocarpus camansi) chocolate cookies comprising the steps of: heating of electric oven at a predetermine temperature, creaming of butter, brown sugar and white granule sugar into a mixer bowl, mixing of eggs and vanilla to the creamed ingredients, mixing of the dried ingredients (breadnut seed flour, cocoa powder, baking powder, and salt), sifting of the dry ingredients, mixing the dry sifted ingredients to the egg mixture making it a complete dough, scooping the complete dough, weighing the scooped dough to 12 g., dropping the weighed dough to the baking sheets spacing 5 cm apart, baking the dough in the baking sheets into a preheated oven at a predetermined temperature for 20 minutes, continue baking the baked cookies at a predetermined temperature for 10 minutes to obtain the desired crispiness, cooling the baked cookies, and placing the cooled cookies in an airtight container.
