Abstract

本發明提供一種水性碳酸飲料,其特徵係飲料中含有0.01w/v%以上之LM果膠(pectin)、0.1w/v%以上之海藻酸或其鹽、或0.001w/v%以上之結冷膠(gellan gum),且pH為3.5~7.0。

Description

水性碳酸飲料
本發明係關於水性碳酸飲料,能利用於醫藥品、成藥及食品等領域中。
肥胖係達到代謝症候群(metabolic syndrome)之嚴重社會問題。作為用以預防肥胖之有效手段列舉為限制食物攝取量之節食法,但實際狀況係由於由此產生之空腹感而無法長期持續。因此,為解除空腹感,提供有以香料或香料化合物作為主成分之空腹感緩和劑(參照專利文獻1)、穀類食品(參照專利文獻2)、可食性磷蛋白質(phosphoprotein)與金屬之碳酸鹽(參照專利文獻3)等。
作為用以改善此空腹感之方法之一,已報導有使用寒天,在胃液中浸漬一段時間後提高寒天之凝膠強度之方法(參照專利文獻4)。然而,由於必須咀嚼固態凝膠並喝入,故尚無法說是實用性高。亦以報導有使用含凝膠化劑之胃內脂渣(raft)組成物之方法(參照專利文獻5)或含有與水性之酸接觸時能生成非毒性氣體之氣 體生成物質之胃內脂渣組成物之方法(參照專利文獻6)。其係具有藉產生之氣體影響而於胃內浮游之性質,不易因胃的蠕動運動而消化,但由於係大量攝取粉末或錠劑而有服用性不良之課題。此外,將該等溶解於水中者由於氣體產生劑之影響而呈現鹼性,故有作為飲料時保存性差、即使使粉末溶解後飲用時亦呈嗜好性低之風味的課題。

本發明之目的係提供一種飲用前為通常之水性碳酸飲料,但飲用後在胃中與胃酸反應而凝膠化,可以浮游之狀態滯留在胃中而具有如飽足感之性質之水性碳酸飲料。
本發明人等為解決上述課題而積極檢討之結果,發現飲料中含有0.01w/v%以上之LM果膠(pectin)、0.1w/v%以上之海藻酸或其鹽、或0.001w/v%以上之結冷膠(gellan gum),且將pH設定成3.5~7.0之水性碳酸飲料,其於飲用前係通常之液體(水性碳酸飲料),但飲用後在胃中與胃酸反應而凝膠化,且以浮游狀態滯留在胃中而具有如飽足感之性質。且,此種水性碳酸飲料由於為飲料形態故可簡單攝取,可設計為酸性~中性故可設計為保存性高且嗜好性高的風味。
基於該見解獲得之本發明之樣態如下。
(1)一種水性碳酸飲料,其特徵係飲料中含有0.01w/v%以上之LM果膠、0.1w/v%以上之海藻酸或其鹽、或0.001w/v%以上之結冷膠,且pH為3.5~7.0。
(2)如前述(1)之水性碳酸飲料,其中海藻酸鹽為海藻酸鈉或海藻酸鉀。
(3)如前述(1)之水性碳酸飲料,其中結冷膠為脫醯基型結冷膠。
依據本發明,可提供一種飲用後在胃中與胃酸反應而凝膠化,且其凝膠以浮游狀態滯留於胃內而具有如飽足感之性質之水性碳酸飲料。
所謂「果膠」為以經α-1,4-鍵結之聚半乳醣醛酸(polygalacturonic acid)為主成分之水溶性多糖類,萃取自蘋果或柑橘類。本發明之果膠可為源自蘋果、源自柑橘之任一者,但必要的是果膠之構成糖的以自由酸或甲酯存在之半乳醣醛酸為甲酯者之比率未達50%之「LM果膠」。因此,將甲酯之比率為50%以上之果膠稱為HM果膠,但其在酸性區域不會凝膠化,不適於本發明。
LM果膠之含量(調配量)在飲料中為0.01w/v%以上,基於凝膠之強度及服用性優異且可使於胃內之凝膠體積有效地充分增大而言,較好為0.025~5w/v%。又,本發明中,所謂w/v%係表示相對於全部體積100ml之質量(g)之比例。
「海藻酸」係昆布或海帶等海藻中所含之多糖類,廣泛利用作為增黏安定劑。海藻酸為甘露醣醛酸(mannuronic acid)與葡糖醛酸(glucuronic acid)經直鏈聚合而成之構造,已市售有鈉鹽、鉀鹽、鈣鹽、銨鹽等。本發明中任意海藻酸或其鹽均可使用,但就溶解性方面而言以海藻酸鈉或海藻酸鉀較佳。
海藻酸或其鹽之含量(調配量)在飲料中為0.1w/v%以上,基於凝膠之強度及服用性優異且可使胃內之凝膠體積有效地充分增大而言,較好為0.3~5w/v%。
「結冷膠」為微生物(依東鞘氨醇單胞菌(Sphingomonas elodea))在菌體外產出之多糖類,已廣泛 利用作為增黏安定劑。結冷膠為直鏈狀之雜多糖類,由葡萄糖、葡糖醛酸、葡萄糖、鼠李糖(rhamnose)之4糖的重複單位構成,具有源自葡醣醛酸之羧基。結冷膠係依據於經1-3個鍵結之葡萄糖中存在醯基與甘油基之有無而分成脫醯基型結冷膠與原生型結冷膠兩種。本發明中任意結冷膠均可使用,但就凝膠強度方面而言以脫醯基型結冷膠較佳。
結冷膠之含量(調配量)在飲料中為0.001w/v%以上,基於凝膠強度及服用性優異且可使胃內之凝膠體積有效地充分增大而言,較好為0.0025~1w/v%。
此外,本發明中,上述LM果膠、海藻酸或其鹽、及結冷膠中之任一種均可使用,但就作為碳酸飲料飲用後可使胃內之凝膠體積更為增大而言,較好使用LM果膠或海藻酸或其鹽,更好使用LM果膠。
「水性碳酸飲料」係指在適於飲用之水中壓入二氧化碳,且將食品、食品添加物等添加於其中者,其氣體體積較好為0.5~4.0。前述氣體體積為標準狀態(1大氣壓、15.6℃)下,相對於溶劑的液體1其中能溶解之二氧化碳之體積比。
水性碳酸飲料之pH,就飲用前為通常之水性碳酸飲料,但飲用後在胃中與胃酸反應而凝膠化而言,為3.5~7.0。為使pH保持在上述範圍,可視需要調配pH調整劑。pH調整劑較好為有機酸,其中就緩衝能強且飲用前不易凝膠化之觀點而言,以檸檬酸、蘋果酸、己二酸較 佳。該等之量在飲料中為0.001~5w/v%,就緩衝能及服用性方面而言,更好為0.01~2w/v%。且,為了製造上述pH範圍,可視需要調配保存劑。其中保存劑較好為苯甲酸及苯甲酸鈉等苯甲酸鹽,該等量在飲料中為0.001~0.5w/v%,就保存性及服用性方面而言,更好為0.005~0.1w/v%。
水性碳酸飲料可藉過去習知之方法製造。例如,將各成分添加‧混合於水中並溶解,而調製飲料原液。接著,視需要進行pH之調整或加熱殺菌後予以冷卻後,藉由以使氣壓成為特定範圍之方式氣封入碳酸氣體(碳酸化(carbonation)),填充於容器中,進行殺菌之步驟而製造。
又,碳酸飲料之製法有預混合法或後混合法,但本發明中可使用任一種方法。
且,水性碳酸飲料中可在不損及本發明效果之範圍內適當調配維他命類、礦物質類、胺基酸及其鹽類、生藥、生藥萃取物、咖啡因、蜂王漿(royal jelly)、糊精等作為其他成分。進而視需要,可在不損及本發明效果之範圍內適當調配抗氧化劑、著色劑、香料、矯味劑、保存劑、甜味料等添加物。
實施例
以下列舉實施例、比較例及試驗例更詳細說明本發明。
實施例及比較例
將檸檬酸單水合物、苯甲酸鈉添加於純水中,經溶解,以鹽酸、氫氧化鈉水溶液調整pH。使LM果膠、HM果膠、海藻酸鈉、結冷膠、卡拉膠(carrageenan)或黃原膠分別溶解於該溶液中,再於該溶液中添加純水,使總量成為25ml,且以氫氧化鈉水溶液微調整pH。將各試驗液填充於玻璃瓶中後進行殺菌,且在即將評價前添加75ml之碳酸水或純水,藉此獲得實施例1~8、10、11、13~16、18、19及比較例1~6之水性飲料。
實施例9、12、17為將檸檬酸單水合物、苯甲酸鈉添加於純水中,且分別溶解LM果膠、海藻酸鈉、結冷膠,再將純水添加於該溶液中使總量成為25ml,添加碳酸水後,以鹽酸、氫氧化鈉溶液調整pH,使總量成為100ml。
實施例1~19中獲得之水性飲料為氣體體積為0.5~4.0之範圍內之總量為100ml之水性碳酸飲料。各水性飲料之組成及pH示於表1~5。
試驗例 滴加人工胃液時之性狀‧體積
將作為人工胃液之37℃之日本藥典1液(日本藥典壞試驗法第1液)100ml中滴加100ml之以冰水冷卻之上述實施例及比較例之水性飲料,觀察在37℃下保溫10分鐘後之性狀,測定全體體積。結果示於表6~10。又,表中,所謂「浮游」係表示凝膠化之水性飲料浮在前述日本藥典1液上之狀態。
如實施例1之調配LM果膠之水性碳酸飲料與如比較例1之僅調配LM果膠之水性飲料不同,因凝膠內部產生碳酸氣體之氣泡而膨脹,比重變輕而浮游,使全體之總體積增加。調配海藻酸鈉、結冷膠之水性碳酸飲料之情況(實施例2及3、比較例5及6)亦相同。
相對於此,分別調配HM果膠、卡拉膠及黃原膠之比較例2~4之水性飲料在滴加日本藥典1液後未確認到凝膠化。
且,如實施例4~7所示之LM果膠之調配量在0.025w/v%以上,如實施例8~9所示之在pH3.6~6.8之範圍,均見到凝膠與浮游。關於海藻酸鈉,如實施例10所示之調配量0.3w/v%以上,如實施例11及12所示之pH3.9~6.7之範圍均確認到凝膠化與浮游。結冷膠如實施例13~15所示,調配量0.0025w/v%以上,如實施例16及17所示,於pH4.3~6.7之範圍,均確認到凝膠與浮游。
如實施例18及19所示,即使調配有高濃度LM果膠之低pH溶液,亦確認到凝膠化與浮游。
〔產業上之可利用性〕
依據本發明,可提供飲用前為通常水性碳酸飲料,但飲用後在胃中與胃酸反應而凝膠化,在以浮游狀態滯留於胃中而具有如飽足感之性質之水性碳酸飲料。因此,藉由提供本發明作為目的用於預防肥胖之節食之醫藥品、成藥及食品,被期待於該等產業之發展。

Claims (3)

  1. 一種水性碳酸飲料,其特徵係飲料中含有0.01w/v%以上之LM果膠(pectin)、0.1w/v%以上之海藻酸或其鹽、或0.001w/v%以上之結冷膠(gellan gum),且pH為3.5~7.0。
  2. 如請求項1之水性碳酸飲料,其中海藻酸鹽為海藻酸鈉或海藻酸鉀。
  3. 如請求項1之水性碳酸飲料,其中結冷膠為脫醯基型結冷膠。
