Abstract

Спосіб виготовлення довгих макаронних виробів передбачає формування тістового напівфабрикату шляхом подавання тіста через прес-форму, його нагрівання та висушування кондиціонованим повітрям в кількох кліматичних зонах і розрізання на певну довжину. Тістовий напівфабрикат формують у вигляді жмутів тіста з вологістю 28 – 35 %, а просушування здійснюють шляхом їх безперервної поздовжньої подачі та переміщення на горизонтальному повітронепроникному транспортері. Причому кондиціоноване повітря подають перпендикулярно жмутам тіста зі швидкістю, що забезпечує їх знаходження на транспортері у віброкиплячому шарі.
