Abstract

On soumet de la pulpe sucrière brute imbibée d'eau acidifiée à une succession de compressions et décompressions alternées. Cette contrainte mécanique provoque une sorte de rouissage des fibres de la pulpe, c'est-à-dire un effet tel qu'elles se séparent les unes des autres, leur réarrangement directionnel et la dissolution de la pectine.
