Definitions
- the present invention relates to a new process for the ozone treatment of plant materials, comprising in particular wheat, other cereals and legumes.
- This ozone treatment process can in particular be implemented for the manufacture of so-called "technological" flours from common wheat grains. These are flours whose physical and / or chemical properties have been chosen to meet certain criteria necessary for their subsequent use in the baking and pastry industries.
- This process can also be implemented for the production of semolina and pasta from durum wheat grains.
- the toughness and extensibility relate to doughs intended for conventional bread-making and have an important influence on the development and structure of the bread after baking, as well as on the ease of work during the kneading and shaping process.
- Tolerance is the ability of the dough to adapt to different manufacturing processes.
- the porosity mainly concerns the so-called “high ratio” English cakes, as well as the sponge cakes, where the nascent alveolar structure is of capital importance. on development and behavior during the cooking process (continuous and homogeneous swelling without collapsing after cooking).
- the enzymes particularly involved in the color of the crumb are polyphenol oxidase and lipoxygenase. Regarding conservation, and particularly the oxidation of lipids (causing rancidity), it is mainly lipase.
- millers To cope with the adaptation of flours to certain manufacturing processes, millers have the custom of adding certain additives to modify the behavior of dough made from conventional flours.
- the addition of amylases can lead to an improvement in the volume of the product obtained, after baking, and to better hydration of the flour during wetting and kneading, and to less staining of the finished product, characteristics which are directly linked to the partial hydrolysis of starch in flour by amylases.
- a new type of treatment which does not rely on the addition of additives, is heat treatment.
- Thermal treatments make it possible to deactivate gluten, that is to say to prevent the formation of the glutinic network.
- These methods also modify the starch by pregelatinizing it to a greater or lesser degree. These methods therefore make it possible to control certain physical and chemical properties of the flours.
- the studies of the Applicant demonstrate that the conditions for treatment with ozone according to the present invention allow the latter to penetrate into the heart of the tissues, or even of the cells, of a plant material which is not yet ground , in which these structures (tissues, cells) are still intact.
- Ozone can therefore, under these conditions, react directly with biomolecules contained in these tissues or cells, such reactions not occurring when plant materials which are not yet ground are treated with ozone, according to methods previously described in the art. prior.
- the studies presented relate in particular to the ozone treatment of wheat grains.
- Plant materials which can be used in this process include the grains of cereals other than wheat, such as maize, barley, rye, triticale.
- leguminous plants such as soybeans, peas, carob, guar
- other species such as flax and crucifers (cabbage, rapeseed , mustard).
- leguminous plants the modification of proteins inside tissues or cells can present advantages for the manufacture after extraction of specific products containing the modified proteins.
- the present application aims to cover a process for the ozone treatment of unmilled plant materials, comprising at least the following steps: a) pre-wetting of said plant material by adding a volume d 'water; b) the rest phase of said plant material thus moistened; c) bringing said plant material into contact with ozone; which method is characterized in that said rest phase has a duration greater than or equal to 1 day, in that the ozone treatment is carried out using a dry ozone gas and in that it comprises a additional humidification carried out simultaneously at or at most 10 minutes before said contacting with ozone under conditions making it possible to provide from 3 to 10% by weight of water to said plant material relative to the dry weight of the material and preferably 3 to 5%.
- the plant material will preferably comprise grains of wheat, either common wheat or durum wheat.
- Figure 1 shows a histological section of the wheat grain at the periphery, which shows the 3 main layers (pericarp, aleurone layer and albumen), as well as the simplified modes of action of ozone depending on whether the we work in a dry or wet process.
- FIG. 2 shows the impact of the ozone dose on the alveogram obtained on the Chopin-Dubois alveograph, all the other parameters of the process being equal.
- the curve marked 1 corresponds to a conventional flour, well balanced, not treated with ozone.
- the curve marked 2 corresponds to a dough obtained from flour obtained from grains previously treated with ozone and having a higher tenacity and a lower extensibility than the dough marked 1.
- Curves 3 and 4 correspond to the alveogram of pasta obtained from flour obtained from grains previously treated with ozone at an increasing dose of ozone and / or by modifying humidification. These curves perfectly materialize the action of ozone on the tenacity parameter, as well as on that of extensibility.
- Curve 5 corresponds to a dough made from so-called “technological” flour from grains previously treated with ozone under the optimal conditions for protein modification. Curve 5 specifically corresponds to the theoretical curves sought for the manufacture of so-called “high ratio” English cakes. This curve has a maximum tenacity, equal to or greater than 150 and a minimum extensibility.
- FIG. 3 shows the impact of the rate of broken grains on the evolution of the P / L ratio obtained by means of the Chopin-Dubois alveograph.
- the Applicant has broken grains in variable percentage, the addition of these grains to unbroken grains, then the treatment of the whole at constant doses of ozone. From the flours obtained after milling, a test was carried out on a Chopin-Dubois alveograph and the P / L ratio was calculated.
- FIG. 4 shows the impact of the ozone treatment on the viscosity of a solution containing flour in a well-defined dry matter concentration, as a function of time, and according to a process of temperature rise, stabilization, then cooling. In this figure, two curves are represented corresponding to normal untreated flour and to flour treated according to the parameters claimed in the present application.
- FIG. 5 materializes the impact of the pH of the water for additional humidification of the grains on the viscosity of a flour obtained from the grains treated according to a deep action process, this viscosity being studied by the RVA process, as for the experiments shown in Figure 4.
- the curves representing the variation in viscosity relate to two characteristic varieties of common wheat, which are, for variety 1, common wheat of the Courtot type, that is to say a hard wheat, variety 2 corresponds to a wheat of the Shango type, that is to say a common bread-making common wheat.
- the control corresponds to a wheat mixture for common bread-making.
- This application describes an enclosure for treating grains with ozone which can be used in the context of the present invention.
- no study relating to the effects of an extended rest time between the pre-humidification and the ozone treatments and no study relating to the effects of a “complementary” water supply at the time of Ozone therapy has not been performed or suggested.
- ozone can effect deep modifications in the grain of wheat.
- the penetration of ozone into the heart of the grain thanks to the specific conditions of the present invention, allows this reactive molecule to act on proteins (gluten), starch, enzymes and pentosans.
- the effect of ozone on and in wheat grains can be summarized in Figure 1.
- Figure 1 shows a histological section of the wheat grain at the periphery, which shows the 3 main layers ( pericarp, aleurone layer and albumen), as well as the simplified modes of action of ozone depending on whether one works in the dry or wet process.
- the dry route corresponds to the treatment with ozone of a grain of wheat having a humidity in accordance with the natural humidity during its harvesting or its storage (between 13 and 15% of humidity compared to the total weight).
- the action of ozone is preferably located at the periphery of the grain and will therefore have a surface action (reaction with all of the chemical or organic compounds present on said surface).
- the penetration of ozone inside the grain is very low.
- the wet route corresponds to the treatment with ozone of a wheat grain having undergone additional hydration in accordance with the data and treatment parameters of the process described in the present application.
- the action of ozone is deep down, the ozone reacting on the components of the 3 layers previously described.
- the Applicant considers that the longer the rest time, that is to say the time elapsing between the pre-humidification and the ozone treatment phase (also called “conditioning time”), the longer the humidity penetrates the grain, dilates the micropores and promotes conduits for rapid exchange and penetration of ozone inside the grain.
- the Applicant has observed that a 24 hour rest period between the pre-humidification phase and the ozone treatment phase is the minimum sufficient for most of the applications sought. However, this time can be modified according to the variety of wheat, or the quality of the wheat, which one wishes to treat.
- the nature of wheat linked to their varietal species means that the constitution of the peripheral layers is different from one variety to another, which induces a kinetics of penetration of water different from one variety to another.
- the process of the invention is also perfectly suited to the manufacture of products by grinding durum wheat grains (semolina or flour).
- the Applicant has in fact surprisingly discovered that the ozone treatment according to the invention was advantageous, not only for grains of common wheat, but also for grains of durum wheat.
- the durum wheat sector encounters many problems, different from those affecting the common wheat sector, and which have not yet found entirely satisfactory solutions: a) In the case of durum wheat, there is a very heavy contamination by mycotoxins, and especially by DON (deoxynivalenone). Such contamination results from the affinity of fungi of the genus Fusarium for durum wheat. b) Controlling the color of semolina presents particular problems:
- the normal yellow color of semolina can be bleached by natural lipoxygenase, which causes the consumer to reject these bleached semolina.
- PPO polyphenol oxidase
- PPO polyphenol oxidase
- the Applicant has discovered that the treatment of durum wheat with ozone makes it possible to manufacture flour and semolina in which the inhibition of lipoxygenase and of polyphenol oxidase makes it possible to conserve as much as possible the yellow coloration sought for semolina and avoid any possibility of subsequent browning. Naturally, the more the ozone can penetrate inside the grain, the more the inhibition of these enzymes is ensured. Detailed description of the process of the present invention The conditions which make it possible to manufacture flours having the desired physical and chemical properties will be specified in the following, by the treatment of wheat grains.
- the measurement of the grain moisture can be carried out by various methods well known to those skilled in the art, for example involving automatic NIR (Near Infra Red, or even near infrared) analyzes.
- NIR Near Infra Red, or even near infrared
- the first step in the manufacture of flour from such grains is a so-called pre-humidification step, which is called “conditioning” by a person skilled in the art.
- This step which is necessarily preceded by a step of cleaning and removing dust and foreign bodies, for example by blowing, sieving etc., aims to bring the moisture of the grains to about 16 to 18%.
- the water supplied as part of the pre-humidification of the grain prior to the ozone treatment makes it possible to increase the humidity of the grains by a value preferably between 3% and 5% compared to the dry weight of the grains.
- Pre-humidification gives the grains special properties, both during treatment with ozone and during grinding.
- the pre-humidification is carried out with a water source, preferably with drinking quality water.
- a water source preferably with drinking quality water.
- pre-humidifying it is best to use water that does not contain an oxidizing agent. It is therefore not necessary to use ozonated water as recommended by the teaching of application WO 01/43556.
- this rest phase must last at least 1 day. It has in fact been observed that an insufficiently long rest time, less than about 24 hours, does not allow the ozone during the treatment to reach the core of the grain and therefore to provide the desired effects. In fact, the rest time has a direct action on the penetration of humidity and consequently on the subsequent action of the ozone inside the grain. A modulation of this time modulates the effects of ozone.
- the process according to the invention can give technically acceptable results with rest times greater than 72 h, the concern to make an economically efficient use of the reactor induces the choice of a rest time less than or equal to 72 hours.
- the rest time will therefore preferably be between 1 and 3 days. More preferably, the rest time of the process of the present invention will be between 36 and 48 hours.
- a dry ozone gas having a dew point of between -60 and -80 ° C. will be used here.
- This gas can be produced by conventional methods from carrier gases which can be air oxygen, pure oxygen or a mixture of the two.
- An ozonator makes it possible to produce a dry ozone carrier gas from a source of dry oxygen.
- the amount of ozone used is between 6 and 20 g / kg of grains and preferably between 7 and 13 g / kg of grains. Of course, the precise quantity depends on the nature of the wheat and the expected results.
- the concentration of ozone in the carrier gas is typically between 60 and 200 g / m 3 tpn, and preferably between 80 and 140 g / m 3 tpn.
- the pressure of ozone carrier gases in the reactor during the treatment is typically between 200 and 1100 mbar and preferably between 600 and 800 mbar.
- This duration will generally be of the order of thirty (30) to sixty (60) minutes.
- the Applicant has observed that, in the context of bringing the grain into contact with ozone, it is advisable to add a quantity of so-called “complementary” water to the grain.
- This amount of water is between 3 and 10%, preferably between 3 and 5% relative to the dry weight of the grains.
- the amount of water used can be determined by mass flow measurement or another method well known to those skilled in the art.
- the pre-humidification step has the effect of bringing the moisture content of the grains to a value preferably situated between 16 and 18%
- the effect adding "complementary” water will increase the humidity of the grains to a value preferably between 19 and 28%, more preferably between 19 and 23%.
- the water used for the so-called “complementary” humidification is brought in the form of a mist of very fine droplets by spraying under pressure onto the grains in a closed enclosure which can be the treatment reactor itself or a device Annex.
- the mass of grains must be animated so that the liquid film deposited is homogeneous and involves all of the grains.
- the “complementary” water is brought to the grains simultaneously with the contact with ozone.
- water is introduced during the very reaction with ozone.
- water can be supplied for a certain time before the ozone arrives in the reactor, this time being at most 10 minutes before the introduction of the ozone and preferably 2 to 3 minutes.
- the water used for further humidification contains a pH modifying agent.
- the Applicant has in fact discovered that modifying the pH of the water used for additional humidification is a particularly advantageous means for modulating at will the physico-chemical properties of the flours resulting from the grain treatment process according to the invention.
- the use of a substance making it possible to reach a basic pH between 8 and 12 generally makes it possible to increase the viscosity of the dough.
- the basification of the water used for additional humidification in such a case, can be carried out using a base approved for use in an agrifood context, such as sodium hydroxide, sodium carbonate, sodium bicarbonate .
- pastes having a lower viscosity may also be advantageous to have pastes having a lower viscosity, a case in which the Applicant has shown that the use of a pH of 3 to 6 for the water used for additional humidification is particularly useful.
- Acids which allow this pH to be reached and which are approved for use in the food industry include, for example, citric acid, acetic acid, or any weak acid of food quality.
- the Applicant has used and developed several methods of measuring physical and chemical properties making it possible to assess the suitability of the flours obtained for use in processes for the manufacture of consumer products by the cereal baking industry.
- RVA Rapid Viscosity Analysis
- Table I summarizes examples of wheat grain ozone treatment parameters. Five lots of wheat grains were treated with ozone by varying various process parameters, including the standing time, the amount of additional water added and the pH of this water. The results of the viscosity, alveogram, etc. measurements are given for each choice of parameters of the process. The comparison with a non-ozonated wheat sample is also presented.
- the wheats tested were mixtures of different varieties of wheat known to be bread-making. In other series of tests, higher pure bread-making varieties have been treated; In this specific case, the Applicant has obtained results of the same nature as those given below.
- the Chopin-Dubois alveograph is a test based on the following observations: during pan fermentation, a multitude of small bubbles of carbon dioxide (CO 2 ) are formed within the dough, which constitute more or less important alveoli. and more or less numerous depending on the plasto-elastic properties of the gluten which retains them.
- CO 2 carbon dioxide
- the test therefore consists in artificially reproducing this phenomenon by subjecting a dough sample, in the form of a washer under well-defined conditions (application time, temperature, hydration, to an air pressure to measure their power of extension) .
- the device records a graph which can be interpreted as follows:
- the height of the curve which measures the maximum air pressure P in the dough, determines the resistance of the gluten to deformation. It materializes the tenacity of the dough. The more P is important, the more the dough resists and in the extreme shrinks during elongation;
- the length of the curve L determines the time during which the gluten is allowed to deform without breaking.
- the length L materializes the extensibility. The larger L, the easier the dough will stretch without breaking. This value is related to the swelling G of the bubble;
- the W (area under the curve) corresponds to the deformation work related to one gram of dough. It expresses “baking strength”;
- FIG. 2 shows the impact of the ozone dose on the alveogram obtained on the Chopin-Dubois alveograph, all the other parameters of the process being equal.
- the curve marked 2 thus corresponds to a dough obtained from flour obtained from grains previously treated with ozone and having a higher toughness and a lower extensibility than the dough marked 1. It should be noted that this modification of the alveogram is very similar to that obtained by adding ascorbic acid. It is very interesting in this context to note that the preliminary treatment of the grain with ozone makes it possible to suppress the addition of ascorbic acid before kneading, thus responding to the aforementioned desire to avoid the use of additives.
With a higher ozone dose, the pasta therefore becomes much more tenacious, but also slightly porous. They allow, in this case, an improvement in the resistance to cooking of English cakes called "high ratio" or sponge cakes, a criterion sought by manufacturers.
- the alveogram loses its plateau and its asymmetry, and takes the form of a peak, similar to what is observed for chlorinated flours.
In this ultimate case, the ozone-modified gluten is both very weak and highly porous. This characteristic allows it to be neutral in the production of products rich in sugar, other proteins and fats, and to avoid excessive swelling during cooking, followed by a collapse on cooling. Such flour produces a cake that rises more slowly, freezes after rising, but does not fall back after cooling. •
- the Applicant has constituted batches of homogeneous wheats which have been artificially increased (by mechanical action), prior to treatment with ozone, the level of broken grains.
- the increase in the rate of broken grains was first carried out for research purposes.
- the modulation of the level of broken grains can also constitute an industrially applicable means for controlling the physical and chemical properties of the flours resulting from the process of the present invention.
- the content of the broken grains being in direct contact with the ozone inside the grain during treatment with the latter, their use makes it possible to better understand the nature of the reactions caused by ozone.
- the broken grains offer direct access to the action of ozone, promoting chemical reactions between ozone and proteins.
- the glutinic network previously oxidized by ozone, is therefore more tenacious, which explains the increasing P / L according to the percentage of broken grains;
- the broken grains offer direct access to the action of ozone, promoting chemical reactions between ozone and starch. As a result, less water is available for proteins, which linearly promotes the tenacity of the glutinous network. Since ozone promotes the absorption of water by starch during kneading, the relative hydration of gluten is reduced in the case of treatment with ozone, giving rise to a strong P / L ratio.
- FIG. 4 shows the impact of the ozone treatment on the viscosity of a solution containing flour in a well-defined dry matter concentration, as a function of time, and according to a process of temperature rise, stabilization, then cooling.
- the second part of the curve corresponds to the gradual rise in temperature of the test sample, up to a maximum of 90 ° C.
- the plateau which forms the third part of the curve, corresponds to maintaining the temperature of the sample during the viscosity measurement.
- the fourth part of the curve, decreasing part corresponds to the suppression of the heating and to the reduction in the temperature of the sample by a controlled cooling until a stabilization and equilibrium value higher than the ambient temperature (approximately 25 ° C).
- the curves obtained for normal flour and treated flour correspond to the measured values of the viscosity in RVA units, that is to say as an indication, one RVA unit being equal to ten centipoise.
- FIG. 4 makes it possible to compare a flour treated according to the method of the present invention with a normal flour analyzed both by a procedure called RVA (Rapid Viscosity Analysis). It can be seen that, not only is the curve changed, but above all, that the final viscosity of a treated flour is considerably increased compared to an untreated flour. It can be considered that at least in part the changes in the viscosity profiles of the flour solutions result from modifications of the starch. On the one hand, ozone can lead to crosslinking of starch, which results in a direct increase in viscosity. On the other hand, amylase, an enzyme that hydrolyzes starch, is inhibited by ozone.
- RVA Rapid Viscosity Analysis
- ozone can act on enzymes, which are preferentially stored in the aleurone layer (see Figure 1).
- the modification of amylase by ozone causes a change in conformation of the amylase and the suppression, in a large percentage, of its activity. This inhibition of amylase has also been demonstrated by the so-called Hagberg time method. 5) Effect of ozone on polyphenol oxidase, lipase and lipoxygenase
- ozone inhibits enzymes other than amylase.
- polyphenol oxidase, lipase and lipoxygenase has an effect on the color of the crumb of the products obtained from flours obtained from grains previously treated with ozone.
- the crumb is lighter and the flours thus obtained keep much better over time.
- flours derived from grains, previously treated with ozone saw their storage time, in the presence of air, increase from 60 to 80%, or even in certain cases, by more than 100 %. This is explained by the inhibition of lipase by ozone which promotes stabilization of the flours and by the absence of oxidation of natural fatty acids.
- MDA malondialdehyde
- the determination of total MDA is carried out by reaction with thiobarbituric acid (TBA).
- TBA thiobarbituric acid
- the complex between an MDA molecule and two TBA molecules can then be measured, either by spectrophotometry, or by reverse phase HPLC.
- the reaction with TBA is not specific to MDA and the spectrophotometric assay may be subject to interference. Its results are most often expressed in STBAR, or TBA-Reactive Substances. This interference problem is eliminated by assaying the TBA-MDA complex by reverse phase HPLC.
- MDA assays were carried out, according to a conventional method of laboratory analysis, in flours from the grinding of the grains after treatment of the latter with ozone according to the invention.
- the quantities of ozone used are between 5 and 12 g of ozone / kg of wheat. It has been observed that MDA decreases after treatment as a function of the degree of humidification of the grains and decreases proportionally with the dose of ozone applied. The decrease in MDA is significant, typically of the order of 15 to 25%.
- the ozone treatment according to the present invention therefore has a stabilizing effect on the oxidative processes.
- the absence of lipoxygenic activity confirms the absence of lipid oxidation.
- FIG. 5 materializes the impact of the pH of the water for additional humidification of the grains on the viscosity of a flour obtained from the grains treated according to a deep action process, this viscosity being studied by the RVA process, as for the experiments shown in FIG. 4.
- the curves representative of the variation in viscosity relate to two characteristic varieties of common wheat, which are, for variety 1, common wheat of the Courtot type, that is to say a hard wheat, variety 2 corresponds to a Shango type wheat, that is to say a common bread-making soft wheat.
- the control corresponds to a wheat mixture for common bread-making. 'The increase or decrease in viscosity is very dependent on the variety of wheat treated, each variety having a specific behavior.
- the preferred pH range of the water used for additional humidification is between 8 and 13, and more preferably from pH 8.5 to 9.5.
