Abstract

Um ein Nahrungsmittelprodukt, insbesondere ein Snack-Produkt, sowie ein Verfahren zu seiner Herstellung zu erhalten, welches ernährungsphysiologisch vorteilhaft ist und welches zugleich eine knackige, brüchige Textur aufweist, wird vorgeschlagen, dass das Nahrungsmittelprodukt im Wesentlichen stärkefrei ist und eine Schaumstruktur aufweist, wobei der Feststoffgehalt einen Proteinanteil von ca. 25 Gew.-% oder mehr aufweist, welcher zu ca. 65 Gew.-% oder mehr aus Gelatine und/oder Kollagenhydrolysat besteht.
